    Give hypnotism a try.
Or maybe OTC drugs (or scrips).
    Or just deal with it.
You seem like a levelheaded guy who doesn't need sleep.

I had the same issue, stopped drinking any caffeine beyond my morning cup and now I get really out of it by the time it gets late.

When I start dreaming I’ll wake up.

I’m starting some anti anxiety meds though.
The REM problems and the Night Terrors (paralyzed and being aware of your surroundings) are a few of the symptoms of narcolepsy.

How do you know you hit REM so fast? REM is the deep sleep that's healthy for you.

There are a lot of factors that can interfere with your sleep. The anxiety is definitely one of them. Do you spend a lot of time lying down in bed prior to going to sleep? That could be sending your body mixed signals. It is in a relaxed state and lying around in bed or on the couch for a long time before actually going to sleep will make it harder to get to sleep and stay asleep. Don't go to bed until you are tired and ready to sleep.

Drinking at night will initially help you fall asleep but once the alcohol wears off you will be wide awake at 4:00 AM. You may also find your sleep interrupted to use the bathroom in the middle of the night if you drink alcohol or caffeine too close to bedtime.

Try getting more cardio in, it may help to wear you down, but don't exercise too close to your bedtime, you'll be wide awake.

Do you take naps during the day? Try to skip them and save the sleep for night time. For the anxiety, find something to occupy your mind. Don't give it a playground too close to sleep time.

Dude last night was fu#king weird. So I’m falling asleep and I’m having thoughts or whatever and then they fade away. My head starts spinning. Then I go right into the next stage of sleep, but I’m still conscious.

Never felt anything like that before in my life. I think it’s called sleep paralysis. Where your body is asleep, but your mind is conscious of what’s going on. And I could feel my body being worked on. The cells and muscles repairing themselves. Electrical impulses in my brain. Tiny little shocks all through out my body. And I could feel the transitions between sleep stages. My breathing rate. I noticed everything. Honestly, it was kinda cool. But after one cycle, I woke up and couldn’t go back to bed.

It's also called Lucid Dreaming. You should read Carlos Casteņeda my friend.
Castaneda said it took him two years of constant practice to pass the first gate of dreaming, at which point he became aware of falling asleep, could hold images in dreams, and his consciousness could enter his energy body. After that, his dreaming practice involved further training to develop and use the energy body.
But additionally, you should see a neurologist and/or a pulmonologist for a sleep study. There are very dangerous outcomes for people with extremely rare sleep disorders.
