Yeah Roger is much bigger, that was the openweight final. That's one of the things I like about BJJ, how a smaller guy can win the absolute division.
The difference between the two isn't mentioned really. Every now and then it's discussed how certain techniques would be modified for no-gi or a streetfight, and one of the instructors sometimes goes over stuff like standing wristlocks and things like that, but that's about it.
I can understand why it bothers some of the Gracies, a lot of people forget that the style they taught covered more real-fight possibilities than sport BJJ does, and is more of a complete style in certain ways. Plus like you said, scoring points goes against the idea of the art, makes it less likely that you'll be wearing out a bigger guy and using his advantages/strength/size against him.
