I don't understand how Arsenal and Spurs play against Real and Barca who press high up the pitch. If they press up high it means there is acres of space for a long ball.

Long balls are usually garbage but against Barcelona you have no choice. Launch it in behind the full backs. and get used to not having the ball. Get used to it.
