Floyd was fighting his 3rd fight at the weight and was only now demanding a catchweight. These are two different things entirely. Plus Floyd is taller and has a longer reach than Canelo.

Edit: the numbers do not support Mr Lotierzo's assumption. A quick glance at the betting lines suggest that Alvarez-Khan was viewed as more competitive than Golovkin-Lemieux.
Golovkin: -1400
Lemieux: +1100
Alvarez: -500
Khan: +350
(both figures taken from Bloody Left Elbow)
In probabilities that = GGG had a 95% chance of winning.
Once I saw that I didn't buy the GGG/Lemuix fight. Even though all these GGG fans hyped that fight up like it was going to be fight of the year. I'm still glad I didn't.
I did buy Khan/Canelo which started out as a 3/1 favorite giving Khan a 25% probability chance of winning...

Mayweather was a 2 time champion in his own weight division asking Canelo to climb down in weight. You can deny that if you like but even if Mayweather didn't start the trend, he popularised it on a mass scale.
