Part of it is the anticipation. If someone you know to be violent comes at you, you know what to expect. But if it's the Fresh Prince, you might be expecting him to joke around. I think that was part of why he didn't return fire. By the time Chris Rock realised what was going on, Will had already turned and walked away.
