Sakuraba coming out to fight Igor after fighting with Royce for 90 minutes

Gracie vs. Shamrock 1
Gracie vs. Severn

Just because after both of those were over at the time, I said to myself WTF just happened and had to watch many replays to really understand grappling and submissions back then. I didn't know what a triangle choke was. I guess Severn didn't either.

Marco Ruas vs. Paul Varelans (showed the importance of leg kicks)
Renzo Gracie vs. Oleg Taktarov (proved the effectiveness of the up kick)

Griffin vs. Bonnar 1

Both Lidell/Ortiz fights because someone finally gave Ortiz the ass kicking he needed.
Coleman/Rua 1 (that was some WWE **** right there)
Fedor vs. just about anyone (I'll go with Arlovski, nice KO)
Anderson Silva vs. Rich Franklin 1 (effective use of muay thai knees and the beginning of Silva's dominance as UFC middlweight champion)
GSP/Serra 2, the beginning of St. Pierre's dominance in the welterweight division

The 1st UFC.

Rampage beating Chuck in the rematch and winning the title.

Shogun beating Machida and finally becoming a world champion. In Pride, he was recognized as the top Light Heavyweight without a belt. (The Grand Prix he won was more of a trophy and not a real championship).

I don't know, there are so many more great moments, but those are the ones I can think of at the moment.

This right hurr. Best moments ever!

Cro Cop in 06 might be arguably the greatest heavyweight of all time of course with Fedor. He was almost unstoppable though. I wish they would have rematched after that tournament.

Tito vs Chuck 2 was a really great big moment too. That rivalry was epic! Too bad they didn't fight again.

GSP vs Hughes 2 was pretty epic too with the torch being passed. Serra vs GSP was epic because the underdog status. That was Pac vs Mosley kind of upset right there.
