Well, it's a movie - they have to make it as dramatic as possible.

The Battle of Stirling in the movie is made to look like a toe-to-toe battle of wills, with the Scots being hugely outnumbered and persevering, and although we were outnumbered in real life, Wallace actually used a bridge to his tactical advantage, basically making the fact that they outnumbered us obsolete.

The battle in real life, was nothing like the battle in the movie.
