i kinda quit meat and chicken first, then dairy (became lactose intolerant), and then finally eggs/egg whites were the last thing to go. i didn't really plan it out that way, it just kinda happened. Easing into might be the way to go. if you do it, make sure you supplement b12. plant based iron can't be absorbed without vitamin c (don't have to be eaten at the same time) so make sure to get both in your diet. brussel sprouts and goji berries are high in both iron and vit c. seaweed is source of epa/dha i believe if you want to get some of that. everyone talks about protein, but it's super easy to hit protein requirements.
