As far as what language they think in, i think (from experience working with them for 8 years), they don't think so much in terms of words, rather, they reflect-rely on what they've learned about the world, and the info that the eyes intake.
Body language, eye contact, body movement all play a crucial role in how they think. They use sign language to communicate, not so much as to think. I think they rely on instinct and experience. Also they rely on feelings, careflully.
