And what I find interesting is that the Egyptians had hieroglyphics for just about everything they did & yet there aren't any that have to do with the construction of the pyramids. It makes you wonder.

We just assume that those people were less advanced than people in the west but in reality, while Europe was in the dark ages, the middle east was flourishing in mathematics, phylosophy and sciences.

They knew things that we assume they didn't. Remember, alot of technology that we have today has just recently been discovered the past 100 years or so, very very recent. Perhaps now, but we all know that many of them who are there are not indigenous to that land. Mostly in the major cities there's middle eastern influence. In other areas they still speak the Coptic language of the Ancient Kemetians. Also, during the ancient times, there was little to no middle easterners in Kemet at all.
