Well being you are already on a calorie defecit diet, i'd go with light jogging or swimming. It's low impact and unlike Sprinting or Skipping won't completely drain you and wear you out.

do you think it is ok to use this mat as a skipping mat to protect my knees and shins and ankles?

IMO its not skipping or running. It's a matter of how intense and efficient you are at the movement. Most people would prefer running however since they've probbably did it most in their life.
