Can someone who really knows about them explain how the relate to nutrition and health....like what foods are high in carbs.....are they good for you.....how much you should have or not have.

If you box, you need a good intake of complex carbs. That means brown rice, oats, potatoes, and veggies.

Just add a serving of one of those to each of your meals.

eat in the morning and at arround 12:00 complex carbs like oatmeal , dark bread, milk,...
eat right before you go to boxing training simple carbs like fruit.
If u want to lose weight you shouldn't eat any carbs after 17:00 except on days when you traing.

I never understood the "no carbs after 7" crowd.
If you work out hard, you need carbs to restore your glycogen stores.
You also need them to be able to apply post workout protein in order to rebuild your muscles for the next day.
If you don't eat any, then go to a morning workout (say, on the weekends or something) after a night workout you'll have no explosiveness; speaking from experience.
Post workout carbs are recommended by nutritionalists.

On the other hand, I know some fighters who are able to maintain an intense workout schedule on extremely low-carb diets. I think it's important to know how your body works.

In general, stay away from the processed foods (white bread, white rice, sugary foots & drinks), try not to eat too much in the way of starches like potatoes, and don't pass up any fruits or veggies.
