when you see something coming you automatically block it or dodge.
ex. would be if suddenly something fall right on top of you you shield your self, same as accidents when people get hit by cars or when a bucket of water is thrown at you you shield yourself.(as if thats gonna help in the car and ater case)
or you find yourself blinking or closing your eyes when you see a punch coming.
you gotta train in your reflex.do a lot of of training with the (floor to the ceiling) speed ball you will learn not to blink when you get punch, learn how to dodge it by weaving/slipping and learn how to block and parry.
well sparring helps a lot too.it improves your whole body reflex .by means of weaving, bobbing, slipping, lunging, swaying, sidesteps ,footwork, blocking, parrying etc... and ofcourse you learn how to retaliate properly(counter punching)

Its normal for a beginner but it wont last long, especially if you are sparring and training pretty much daily. On your own or at the gym doesnt matter.
When you are in the sitaution you were in you are looking for 2 basic punches. The jab which will come from their left hand, the hand that is closest to you. And the straight right to the body. Both of these punches should be in your head straight away as for what they are gonna throw. Learn how to defend against both of those. You could just step out at first, its pretty basic.
Anyone who is throwing hooks or uppercuts at you in a training piece like that isnt training properly anyway.
Now when you get more advanced they will start throwing combinations. Basic combinations that you learn at first are the same ones that your opponent will be throwing at you. So 1-2-left hook. Parry, block, roll to defend that combination. Counter at the end if you see the opportunity.
