Chavez will beat Zbik, the way i see it, Zbik will have to give a great performance if he wants to win, i have watched several Zbik fights, and i really was not impressed at all, he disappoint me a lot in his last fight versus Heiland the argentinian.
Chavez has a great chin, and after he tastes the punches of Zbik, he will not respect him at all, and will make the fight a slugfest, Zbik really doesn't know how to fight in that kind of situation, so Chavez will win on points or by late TKO.
Great matchmaking by Arum, and i think they went the Zbik route instead of the light middleweight fights because Alvarez will probably fight Senchenko for the Title, and they don't want Alvarez boasting that he made if first.

Both are decent fighters. Zbik has better technical skills, Chavez has a bit more power.
Neither is a top 10 middleweight. Zbik is between 11 and 15, Chavez is between 16 and 20.
If the fight happens, Zbik will probably deserve to win a close decision. But Chavez wins a decision if it's in the US or Mexico, while Zbik wins a decision if it's in Germany.
