No one is suggesting that its a classic but when you consider the obvious disadvantages Pacquiao faced in this fight then look at manner of which he set about Diaz and completely destroyed him then you cannot help to be impressed.
There have been many fighters who have jumped weight but they usually labour to a unimpressive win, in this case if you had never watched either fighter before you would have believed that Manny Pacquiao was the lightweight champion, such was his dominance.
Whats equally immpressive about Pacquiao is the manner in which he has changed and adapted his style to become an overall better fighter.

By the sound of it this is similar to Mayweather moving up to 160 and out classing one of the top guys there and then knocking him out. I can't see that happening at all.

Yeah mate, no-one is suggesting that Diaz is a superstar but he was a legit champion in the lightweight divison yet Pacquiao took him apart with ease.
As Likely Lad says Hatton moved up one division and fought a legit champion in Collazo and seriously struggled. Collazo like Diaz was a good fighter but not one of the Elite, Hatton struggled, Pac has moved up several weights yet he excelled.
Even though Pac was moving up in weight he was the favorite and the odds were such that it was what he was supposd to do. Hopkins-Trinidad was a better performance based on odds and the thorough domination by B-Hop. So was Mayweather-Corrales (R.I.P), Corrales went down in weight and was unstoppable when Money May anihilated him.
Jones Jr. went up 25 pounds from his previous fight and 40 pounds from his original weight and won every round, but I might put it on that Jones Jr.-Ruiz level of performance since Manny dominated, beat him up, and brutally ko'ed Diaz.
