I think this is because a lot of them are grapplers. Even if they are not predominantly a grappler, they do practice a lot of grappling/wrestling. Wrestling/Jiu-jitsu/grappling requires a strong neck and shoulders and just practicing these things will further develop your neck.

Yeah, it probably has a lot to do with their training. I'm also under the impression those guys work a lot harder... Heavyweight boxers look like fat slobs nowadays.

Cause they fat!
Honestly, a lot of these UFC guys look like they have a think layer of fat on top of their muscle...no cuts nothing, just fat looking bulk.

They are grapplers and, like pro football players, have been doing neck exercises their whole life. Big neck doesn't not guarantee a resistance to a KO, however. In wrestling, they believe where the head goes the body must follow, so the work to control their own (or the other guy's head). Many great durable boxers had scrawny necks, but hard heads apparently.

Stronger neck muscle= stiffer neck.
So instead of your head moving from the punch, and some of the punch enegry being dispensed that way your neck stays stiff and your head takes all of the impact.
To be honest I never understood why stronger neck= more punch resitance

well I still believe that something like chin is what your born with.
I personaly doubt that a guy that gets KTFO with a jab will be able to withstand a punch if he build a big neck.
